Easy Paleo Gluten-Free Banana Bread Muffins

Wednesday, December 3, 2014

Today I suck less at making healthy treats for my son... and me!

I'm halfway through my Whole30 journey which will become a WholeLife! I've found this way of eating to be easy, fun, and great on my body. No more major stomach issues, I'm sleeping better, and easily losing that extra 5lbs.

Once I'm done, I'll be adding these little treats into my diet. I don't want to go back to my chocolate binges, but I need a little something sweet in the afternoon.
These banana bread muffins are really easy to make and my son loves them too! I'll be doing a follow-up post with raw cacao in these babies. The best part -- NO FLOUR and NO ADDED SUGAR. And they still taste great!

Ingredients
  • 2 Bananas
  • 3 Eggs
  • 1/2 cup chopped walnuts (or your nut of choice)
  • Cinnamon
  • Nutmeg
  • Hemp Seeds
  • 1 TBS Vanilla Extract
  • Ghee or Coconut Oil to line the pan
Steps
  • Pre-heat oven to 375 degrees
  • Chop walnuts in your food processor
  • Blend all ingredients with a hand blender in a large bowl
  • Line cupcake pan with melted Ghee or Coconut Oil
  • Pour evenly
  • Bake for 15-25 minutes depending on your oven
  • ENJOY!

Whole30 - Week 1 Recap

Tuesday, November 25, 2014

Today I suck less at sticking to my guns!

Woohoo! I made it through 7 days of the Whole30 program. I didn't add too many o's to that woohoo, because it really wasn't hard. In fact, it was quite enjoyable. To be fair, I have been eating paleo/gluten-free for the past year. I think that really helps with the program. Whole30 is like a few steps further than eating paleo. Here are a few take aways from this week!

  • I cannot eat eggs in the morning. Nope, hate it! Makes me gag. Bulletproof coffee with some Ghee and MCT oil for me.
  • My favorite thing about Whole30 is that I'm cooking more! I really love trying out new recipes and you HAVE to cook/prepare your meals on this program. I'm enjoying that part of the program immensely.
  • Day 4 was the worst by far. I wanted to kill everyone and I REALLY wanted an Iced Blended Mocha from the Coffee Bean. That is my one addiction. Chocolate and wine were easy. But, I miss my aspartame filled mochas. Oh well, they gotta go--forever.
  • So far so good. I'm eager to see what the next week holds. I'm a little worried about the holidays. Not because of the food, I know I'll want a glass of wine. Sparkling water for me, please!
  • Lastly, SIGN UP for their newsletter! It is extremely helpful, because it holds you accountable everyday and gives you really great advice and support. Just look at what they sent me today :)
That's it for now. I'll keep you posted on my progress and let you know what my measurements are after the 30 days! I have a feeling this will turn into a Whole328.

Update to Paleo Pancakes!

Wednesday, November 19, 2014

Today I suck less and making a healthy breakfast!

I'm updating my Paleo Pancake recipe and it's so freaking good. I'm starting my first day on the Whole30 program. Technically, you aren't supposed to re-create your favorite meals. But, I have a very hard time with savory meals in the morning. I get sick of eggs so fast and my body craves something sweet! So, I'm breaking the rules a little already :(

Either way, you need to make these pancakes! They are amazing. Here is the updated ingredient list.
  • 2 Bananas
  • 3 Eggs
  • 1 scoop of Almond Butter (need addition and it's wonderful!)
  • Blueberries for "syrup"
  • Sprinkle of Cinnamon
  • Coconut Oil for the pan
There you have it! Run to the kitchen to make these now.

I'm going to try to eat all whole foods on this program. But, I'll need this in my back pocket for those days that I NEED something more than eggs!
Enjoy!

I Fancy the Lead Singer

Friday, October 24, 2014

I bought this t-shirt at an H&M in Scotland when I sang backup for Wheatus on their fall UK tour. It made me giggle at the thought of wearing it at my own shows :-) Yesterday, I had the pleasure of hanging with Sousous Photography. Yana was testing lighting for an upcoming photo shoot for my brand new awesomesace band, SÍGNY.

We will be shooting at the Mexican American Cultural Center here in Austin. The building is incredibly intriguing with stark contrasts and brilliant angles. Here were some fun test shots, just messing around.
Giving Yana my best JC Penney catalogue stance! 90's modeling at its finest.

Food Babe's Mexican Organic Black Bean Goat Cheese Tacos w/ a Twist

Tuesday, October 7, 2014

Today I suck less at eating clean mexican food, quickly!

I adore Food Babe. She is fighting the good fight on the clean eating food front. Yesterday, her recipe popped up in my Facebook news feed and it sounded delicious--it was! Black beans and goat cheese make the perfect palate combo.

Instead of the salsa I used this killer Avocado Vinaigrette from Cindy's Kitchen that I bought at Whole Foods. It MADE the tacos!

I added tomato, avocado, red onion, arugula and goat cheese for the toppings.

Make these tonight, you will not regret it. Make enough for leftovers too or you will regret it ;)
