Easy Paleo Gluten-Free Banana Bread Muffins

Wednesday, December 3, 2014

Today I suck less at making healthy treats for my son... and me!

I'm halfway through my Whole30 journey which will become a WholeLife! I've found this way of eating to be easy, fun, and great on my body. No more major stomach issues, I'm sleeping better, and easily losing that extra 5lbs.

Once I'm done, I'll be adding these little treats into my diet. I don't want to go back to my chocolate binges, but I need a little something sweet in the afternoon.
These banana bread muffins are really easy to make and my son loves them too! I'll be doing a follow-up post with raw cacao in these babies. The best part -- NO FLOUR and NO ADDED SUGAR. And they still taste great!

Ingredients
  • 2 Bananas
  • 3 Eggs
  • 1/2 cup chopped walnuts (or your nut of choice)
  • Cinnamon
  • Nutmeg
  • Hemp Seeds

Food Babe's Mexican Organic Black Bean Goat Cheese Tacos w/ a Twist

Tuesday, October 7, 2014

Today I suck less at eating clean mexican food, quickly!

I adore Food Babe. She is fighting the good fight on the clean eating food front. Yesterday, her recipe popped up in my Facebook news feed and it sounded delicious--it was! Black beans and goat cheese make the perfect palate combo.

Instead of the salsa I used this killer Avocado Vinaigrette from Cindy's Kitchen that I bought at Whole Foods. It MADE the tacos!

I added tomato, avocado, red onion, arugula and goat cheese for the toppings.

Make these tonight, you will not regret it. Make enough for leftovers too or you will regret it ;)

Gluten-free Almost Paleo Quiche--Take 2 with Manchego and Roma Tomatoes

Saturday, August 30, 2014

Today I suck less at experimenting with recipes.

This is a follow up post to my Gluten-free Almost Paleo Spinach and Feta Quiche. Since then, I've made a cheddar and broccoli quiche and this manchego and roma tomato quiche. Let me just say, they are deeeelish, easy to make, high protein, low carb creations!

A few tips I've learned along the way:

1. Make sure to remove the excess water from your spinach if using frozen.
No one likes a watery quiche.
2. Beat your eggs well so they are nice and fluffy when you bake them.
3. Remove your quiche when you see the top layer turning nice golden brown.

Here is my Manchego and Roma Tomato Quiche.

Pre-heat oven to 350°
  • 1 bag of frozen spinach
  • 5 eggs
  • 1 cup manchego
  • 2 roma tomatoes diced
  • 2 cloves of garlic minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
Slice and Dice

An excuse to try out my new Cuisinart Immersion Blender in Seafoam Green (obviously).
Saute garlic and spinach until moisture is removed.
Add manchego and tomatoes in with the eggs.
Put everything in a greased pie pan. Bake for 25-35 minutes. Let cool 10 minutes.
Enjoy!

Thai-rrific Curry Quinoa

Thursday, August 14, 2014

Today I suck less at making white people Thai food.

I LOVE Thai food. I have some serious wanderlust for a trip to Thailand but, we'll save that for another post. Last night I was craving curry so I decided to give it a go and make my first Thai dish. Yes, this is a total white person version and I know I have an abundance of quinoa dishes. But, you've gotta start somewhere right? So, here is the Thai-rrific dish I came up with from what I had in my kitchen already.

Ingredients
  • 1 lb Chicken Breast cut into thin slices
  • 1 can Coconut Milk
  • Ghee for the stir-fry
  • 1 bag frozen Broccoli
  • 1 bunch of fresh Spinach
  • 2 tbs Curry Powder
  • 1 tbs Ginger (fresh would be best but, I didn't have any)
  • 1/2 tbs Turmeric
  • 2 tbs of Chili paste
  • 1 cup of Quinoa cooked

Wash and slice Chicken Breast. Cook your quinoa. There is a big debate on whether or not you should wash your Chicken. I'll let you decide.
Wash and chop Spinach.
Combine Coconut Milk, Curry Powder, Ginger, Turmeric, and Chili Paste.
Heat Ghee and Stir-fry your Chicken until cooked through.
Steam your Broccoli while you cook the Chicken.
Remove Chicken and drain pan. Add Broccoli and Sauce, then add the Chicken and Spinach.
Pour over your cooked Quinoa and Enjoy!

Gluten-free Almost Paleo Spinach and Feta Quiche

Wednesday, July 30, 2014

Today I suck less at being afraid of making a quiche.

I went into slight panic mode at 5:02 when I finished working today. I've been training for a new remote position and neglecting my promise to cook more at home. I went to the fridge and from what I surmised, I could make something with eggs, spinach and feta. So, naturally I made a freaking quiche!

The word quiche has always frightened me a little. It sounds like some fancy schmancy french food that I would never even dream of attempting to make. But, today I conquered the quiche and learned that it's really not so scary after all.

Pre-heat oven to 350°
  • 1 bag of frozen spinach
  • 5 eggs
  • 1 cup of feta
  • 2 cloves of garlic minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp crushed red pepper
Mince garlic.
Heat oil and add garlic.
Add in spinach until the moisture is removed.
In the meantime, add eggs, peppers, salt and beat well. Then add half the feta.
Mix everything and place in a greased pie pan. Then top with the extra feta.
Bake for 25-30 minutes until top browns a bit.
Enjoy your bomb ass quiche!
Just look at those feta chunks. Yum.
