Gluten-free Almost Paleo Spinach and Feta Quiche

Wednesday, July 30, 2014

Today I suck less at being afraid of making a quiche.

I went into slight panic mode at 5:02 when I finished working today. I've been training for a new remote position and neglecting my promise to cook more at home. I went to the fridge and from what I surmised, I could make something with eggs, spinach and feta. So, naturally I made a freaking quiche!

The word quiche has always frightened me a little. It sounds like some fancy schmancy french food that I would never even dream of attempting to make. But, today I conquered the quiche and learned that it's really not so scary after all.

Pre-heat oven to 350°
  • 1 bag of frozen spinach
  • 5 eggs
  • 1 cup of feta
  • 2 cloves of garlic minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp crushed red pepper
Mince garlic.
Heat oil and add garlic.
Add in spinach until the moisture is removed.
In the meantime, add eggs, peppers, salt and beat well. Then add half the feta.
Mix everything and place in a greased pie pan. Then top with the extra feta.
Bake for 25-30 minutes until top browns a bit.
Enjoy your bomb ass quiche!
Just look at those feta chunks. Yum.

What's in My Makeup Bag?

Today I don't really suck less at anything, but maybe this post will help shave a few minutes off your makeup routine.

Forever 21 FINALLY restocked this adorable Boston Terrier makeup bag. I missed my chance on buying it the last time around. I'm a total sucker for anything with cute animals and anything colored sea-foam green (duh)!
After years of tweaking my morning makeup routine, I've gotten it down to 5 minutes. This was an absolute must after I became a Mom! I save my smokey and cat-eyes for performances or date nights these days.

I'm must say that even at 34 I'm blessed to not have to wear foundation. I actually prefer to not wear it because it covers up the little freckles I do have. As a redhead I proudly wear my freckles ;)

So here's my 8 step morning makeup routine.
 1. Aubrey Organics SPF 15 Defense MoisturizerCombining Moisturizer and SPF saves a step! This was rated 2 from EWG. I always check my sunscreens on their website to avoid harsh chemicals.

2. Stilla Brighten & Correct Concealer To cover up sleepless nights with Copeland and the occasional blemish.

3. BareMinerals Touch Up Veil in Translucent - Light coverage and gets rid of shine.

4. Nars Blush in Orgasm

5. Urban Decay Eye Shadow Primer in Potion - Keeps you from having to reapply later.

6. Urban Decay Naked Palette 3I have all 3, but I'm digging the rose colors right now.

7. MAC Cosmetics Eye Shadow in Embark - I use it to fill in my brows.

8. L'Oreal Telescopic Eyes Mascara in Carbon Black - Best brush I've found. Super skinny.

Banana-Blueberry Paleo Pancakes

Sunday, July 27, 2014

Today I suck less at making no flour, low-sugar, gluten-free, paleo pancakes!

Let's be honest, I told myself I was looking for a healthier-paleo version of pancakes for my son to enjoy. But, the reality is I really wanted some freaking pancakes, sans the guilt.

My first batch turned out like a sloppy pile of S**#! Tasted great, but was not exactly the Pinterest worthy picture I was hoping to achieve. In my second attempt I added, an extra egg, a little more baking powder, and used coconut oil instead of grass-fed butter in the pan. I think the coconut oil is the key to this recipe. Since there is no flour they can be tricky to flip. When you use coconut oil, they slide around in the pan, making your cakes super simple to flip!

I mean, how good do these look?! Yes, I MADE THESE! (Does a happy dance.)
The best part about this recipe is that you don't need a ton of ingredients and NO FLOUR!
  • 1 Banana
  • 3 Eggs
  • 1/4 tsp Baking Powder
  • 1/4 tsp Vanilla
  • Handful of Blueberries
  • Coconut Oil
  • Cinnamon to taste
  • Melt extra blueberries for a low-sugar syrup
Someone got a little grabby with the blueberries while I was setting up my shot.

Ingredients
Mix everything into a bowl except the Coconut Oil.
Add coconut oil to you pan on medium heat. (This was actually w/ the grass-fed butter.)
Once you can easily slide your pancake around you'll know it's time to flip!
Eat your awesome Banana-Blueberry Paleo Pancakes!
Maybe next time make enough to share with your son ;)

Weekend Project: Succulent Saturday

Sunday, July 20, 2014

Today I suck (slightly) less at making succulent pots.

Here is your 10 Step Guide to making your very own succulent pots!

1. Find something around your house that would make a good succulent pot.
2. Get some awesome spray paint. I'm into hot pink right now.
3. Spray directly onto pot and "accidentally" concrete.
3 1/2. Have husband get upset for messing up the back patio.
4. Feed son a bottle of milk and put him down for a nap.
5. Get those rocks you thought would look cool at the bottom of your sink but, really just ended up being a pain in the ass every time you cleaned.
6. Add cactus soil, moss, and succulents
7. Notice how different your pot turned out compared to your husband's pot. Can you spot the Mr. and Mrs.?
8. Take a RED themed selfie.
9. Enjoy your new succulent pots.
10. Bless the state of Texas.

Inspiration: "When We Were Young" Music Video Shoot

Today I suck less at painting my walls.

A couple weekends ago, we filmed a new music video for my next single "When We Were Young". We rented out an adorable and incredibly austiny house on the East side through Air bnb. The house used my favorite color palette. It was filled with aquas, limes, reds, oranges, and my all time favorite color, sea-foam green!

A few days after the shoot, I remembered I had some left over bright aqua paint from Copeland's nursery! Here is the first painting project I completed and a few tips on how to paint without painter's tape.

Tip: Outline the edges and then fill in the space.
Fill in with a smaller brush.
Ta-da! Super cool metal 'P' from Mexico.
Now, I'm on a mission to add more aqua and sea-foam green to our home. What color makes you the happiest?
