Cake Smash Recipe, Take One

Today I suck a little less at baking a cake.

Copeland's 1st Birthday is in 2 weeks. I can't believe how fast this year has flown by. I'm a mixed bag of emotions. I'm also going totally overboard in planning this party. Man, I really hope people show up.

In an attempt to make him a healthier, low sugar cake to smash, I took to the internet. This is a recipe I came up with based on a dozen or so I found online and whatever I had at home already. I wanted to try it out today, but didn't really feel like going to the market.

When I go to make his actual cake, I'll probably use a vanilla frosting. The cake tastes a lot like banana bread. Vanilla will go better than what I made here. But, luckily for me and you I didn't have any so I made a chocolate + avocado frosting! yum-to-the-eeeee!

Here's a lowdown of what I used:

CAKE
  • 4 Ripe Bananas
  • 2 individual cups of Unsweetened Applesauce
  • 3 tsp Vanilla Extract
  • 1 1/2 Cups of Spelt Flour (that's all I had at home)
  • 2 Eggs (beaten)
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • Pinch of salt
Pre-heat your oven to 350.

Mash those bananas
 Add in the applesauce
 Whisk
 Add in the vanilla
 I read somewhere that your eggs should be room temperature before baking. Google that shit, add in your eggs.
 My lovely Mother in Law gave me these cute measuring cups. <3 her and them.
 Mix your dry ingredients.
 Grease your 6 inch pans. I cut out parchment paper to line the bottom. Makes taking the cake out easier.
 Mix dry and wet ingredients. Do a dance.
 Divide your mix into your pans...
 evenly.
 Bake for 30 minutes or so. Just watch and check them with a toothpick. Take them out of the oven! Let them cool on a cooling rack or a rack from your oven if you're like me.

 Now make your FROSTING!

  • 2 Avocados pitted and peeled
  • 1/2 Cocoa Powder
  • 2 tbsp Coconut Oil
  • 1/2 cup of Agave
  • 1 tsp Vanilla
  • Pinch of salt

I use my Nuk baby food processor, because that's all I have at this point for food processing!
Swoon.
 When your cake cools, slice the tops off to make it even.
 Show your son.
 Frost a thin layer on the cake and put it in the fridge for 30-45 mins. This is your crumb layer and will help your frosting stay on nicer.
 Share the tops you cut off with your son.
 Hmm, was it a success?
 Success!
 Frost your cake, eat, and enjoy.
